Good day Sam… Evening? Night time? Lol. Sooooo, for the second time I made “The perfect roast chicken”…. mmmmmm tasty! We Lurvvvvv it!! Today (Scottish time) I made Thai chicken curry….. I’ll tell ye Laddie, that is one tasty dish!! (Tell chance I said hi from Scotland)there is a but…… how do I make it less creamy? It was on the verge of being too creamy like a korma….. we don’t do korma’s. Hope yer aww well and safe 😎🏴❤️

Ok, made to recipe and was very bland. Is this normal? I've never used curry before.
I've made this 3 times now. Today, I used the sauce recipe with red jalapenos, because I still can't find the peppers you use. For the chicken, I dry brined a chicken breast for 24 hours using kosher salt, garlic powder and curry powder as the brine. Then, this morning, vac sealed the breast and sous vide for 4 hours at 140f. Then, I shredded the chicken by hand and mixed into the curry sauce. Letting it sit in the fridge for 6 hours to absorb the flavors and am reheating it and serving it for dinner this evening, over rice.

Great to hear about Max's trip to Edmonton, the capitol of Alberta. My mom was born and raised there before moving to Florida. I have visited several times in my youth. Sam, sorry we missed seeing you in person last week in San Diego. Will be returning in 3 years and hope to run across paths until then we welcome you, Max, and Chance into our kitchen on M-W-F.
