PERUVIAN CHICKEN RECIPE:
2.5lb of Bone in, Skin on, Chicken Thighs
1/3 cup of Soy Sauce
4 Cloves of Garlic, smashed and peeled
Juice of 1 Lime, about 3 tbsp
2 tbsp of Olive Oil
1 tsp of Dried Oregano
1/2 tsp of Cumin
Heavy Pinch of Freshly Ground Black Pepper

For the Sauce:
3/4 cup of Mayo
1 Small Bunch of Cilantro
1 Serrano or Jalapeño, seeded optional
2 Cloves of Garlic, smashed and peeled
1/4 of a Small Yellow Onion or 3 Scallions
2 Tbsp of Extra Virgin Olive Oil
Juice of 1 Lime
Salt to taste

  1. Laura, thank you for cooking this Peruvian chicken. I am from Peru, and I really appreciate you trying different recipes. I believe, we use an herb called "huacatay", which is very aromatic and full of flavour, for this sauce, instead of cilantro (we call it "culantro"). I am thinking the type of pepper we use is "ají amarillo", which we use a lot, almost in all of our dishes.

  4. So my daughter asked me to try this recipe and I am so happy she did. It is absolutely delicious! The flavor from the marinade and the sauce are so very good. Of course, I made the recipe before seeing the video. I marinated the chicken for six hours. I cooked the chicken, on the stove, in a cast iron pan. I substituted labneh for the mayo and the sauce was excellent. Thank you, so much, Laura for sharing this recipe. It really is awesome!!!

  5. I just made this and it came out very well. I marinated mine for 28 hours and it did the trick just nicely. The sauce is key here. I don't like mayo so I used Greek yogurt with a splash of Rice Vinegar instead and it it was great!

  6. I made this yesterday, i like it a little bit spicier so i added Thai chillies instead of Jalapeño and added more black pepper. Otherwise kept the same recipe. I garnished it with scallions, cilantro and side salad. It was restaurant quality!!! The sauce was really good too!!

  9. This recipe is really AMAZING!!! I did not grill my chicken. I stove top cooked them. Making sure both sides of the chickens are well seared. Delicious in every way imaginable. This green sauce I have made it numerous times on my own years ago because I discovered it while trying Peruvian food for the first time and LOVED it. I keep this sauce handy for everything.   10. Hola Laura! Te veo por años, me encantan tus recetas, soy Peruana 🇵🇪 y esta version de Pollo a la brasa para preparar en casa esta genial!!!! Y el Aji verde lo es todo!!! Me encanta con papas fritas y mayonesa aunque ya tenga mayo la salsa, extra es mas! Hehe procurare hacer el Pollo y tal vez recrear la receta + algo q Yo le añada en mis redes y canal ❤
