You asked what the difference is between palestinian and Lebanese Zatar.
The palestinian version has green thyme and more sumac whereas the Lebanese uses Dried Thyme and less sumac. There may be other differences with the oregano and sesame seeds.
Generally there is no "official" version. You can make it up however you please.

Palestine is not a country and the Za’atar you seem to be referring to comes from Israel. It’s hyssop in English

Would it be alright to slice the cauliflower into "steaks" after steaming it so I can put the oil/seasonings on every piece? I think that would be OVER THE TOP!! I love this recipe!! I can't get enough of it.

Love the idea. But what will be left of cauliflower after steaming it for 10 minutes and then roasting for another 20? My english cauliflower becomes soft in like 5 minutes of boiling.
Why would roasting it whole be preferable over breaking it down and putting that flavor on every floret?
I love to cover it in a mayo/mustard spread Then roll in cheddar cheese. Then roast. Yummy!!

I just watched the 9 year old garlic bread video. I’m so glad that you’re still posting new videos! I would love your garlic oil recipe.
I had no idea what the middle eastern spice combination used was, so I researched and found that it’s is spelled Za’atar. There is a recipe online. It has sesame seeds in it. Anything with sesame seeds has to be great.
