Made this again last week. It is so good! Also, I realized that this recipe is actually a variant of Beef Bourguignon. Sam swapped out the wine for Guinness, the beef stock for chicken stock, and added the puff pastry to make it into a pie.
Now that's a potpie I can get behind.

I was going to do a pot roast and remembered the pearl onions in this recipe. I changed course and repeated this recipe. It is absolutely wonderful, possibly the best thing you have done, though the list is long of your recipes that I love. thank you for your simple prep yet wonderful flavors that you have brought into my cooking.

I made this pie about 5 months ago. Loved it! I just got back from a trip to Ireland and had their version of it. This recipe was every bit as good as the one in Ireland! Great recipe!
