  1. This is probably my third time saying something in here… Only because every time I do this, I come and watch it again, but I’m actually wanna write everything down this time. I’m about to do some Cornish hens this way. I’ve already done a few turkeys amazing every time. The only difference is I frog cut mine.

  2. Back from a year ago to do this! Someone deep fried last years turkey thinking they were helping. Ruined our chance to spachcock the turkey.

  7. I came back a year later to vouch. I made this for Friendsgiving last year and boy was it was a HIT 😎 Spatchcocking the turkey was the most challenging part for me, so it is absolutely key to invest in good poultry shears. Have fun y'all 🍻

  8. I made this last year. And it was so amazing everyone is clamoring for me to make it again this year. Thank you for providing some awesome ideas. The second choice was to make a Mojo turkey (similar to your chili lime chicken) Which was dry brine with some garlic powder. Then about 16-20 garlic cloves sauteed in 2-4 tbs of olive oil, cook until oil is infused, and then add 1/3 cup each of lime, lemon, orange juice. Reduce a little, strain, and inject. Then the kewpie mayo, bit of lime juice, and some cilantro and garlic for a rub. And standard cook after that (425 and varying time depending on weight).

    The prevalence of lime in the mojo will get you really close to the recipe from versaille in LA. Which is some of the best citrus/garlic chicken in the world, imo

  10. Important tip, not in the video but in the recipe online: Cover the bird loosely with foil before putting it in the oven. I didn't do that the first time and ended up scraping the outer coating of deliciousness into the trash. Great recipe, though! I'm making it again tomorrow! Wonderful work, Sam and Minions!

  12. I made this and was beyond surprised. It was the best turkey I had ever eaten and the gravy I made from the whiskey drippings, I can't even begin to describe. It was my first time removing the back bone. It was a struggle but I made it. Next time I will get someone stronger than I for this task. I kept apologizing to the turkey for bad butchering I did. Thank you for a wonderful new cooking experience and spice rub.

  13. Question: I'm planning on following this recipe for our Christmas party we are hosting at our home this year. I showed the ingredients to my wife and she is worried about the Cyan pepper in the recipe. With her side of the family not liking spice and there being kids potentially eating the turkey, do you think it would still be good without? Me and my side of the family like spice and wouldn't care, and I know that in the video you say that it is not spicy. Just wanted to ask to make sure. Also to see what you thought. Maybe a suggestion for an alternative… Thank you in advance! Appreciate all you do!
