  2. I already screwed up. I bought a 6-1/2lb breast, thawed in fridge for 2 days.. or so I thought. It wasn't fully thawed so I had to thaw it for an hour in water. Ugh! Did the prep, Buttered it up, put it in at 350 uncovered. Does it really matter if its not at 425 at first? I have the thermometer in to monitor the temp. Only 15 minutes per pound?? That doesn't seem long enough. So would I cook mine for just 2 hours? Its literally in the oven right now.
