My mommy recently had a whipped feta dip with roasted beets, toasted pistachios, and Kalamata olives! She really loved it and she said that feta wasn't too salty and now she requests me to make it all the time π I think I'll make this for Thanksgiving! Happy Thanksgiving and Happy Birthday Laura!!! I have made this about five times now, and I have learned that when serving this to guests, I WILL be asked for the recipe, so the last time I had printed out copies in advance and sure enough, I was asked for the recipe!
