  2. I got yelled out for letting the sauce drop into an aluminum pot. Lol Old timers told us kids only stainless for puree. We us an 60 qt to catch the sauce from machine. Other than that we do the same basicly.

  3. Please upgrade to stainless steel pots whenever it’s convenient to. Aluminum reacts with tomato’s imparting a slight metallic flavor and leaving some of it in your purée.
