North Indian style without onion garlic? Huh.
Very tasty! I've made this twice now, second time it turned out even better ^_^
The first time I had an issue where the Hing hit the oil away from the Cumin Seeds and immediately clumped, I think it didn't get much chance to permeate before adding the Tomatoes. Second time I made sure to drop it onto the crackling Cumin Seeds which diffused it nicely, the flavor seemed more complete this time
Really outstanding. Made it for friends, but sampled it first. I'll make it for family next week!

I've noticed that when using Garam Masala, you don't add it until the very end. I'm sure there must be a reason for not adding is sooner. Does it lose flavor when it is heated?

Just made this for dinner tonight, as in checked my emails about an hour and a half ago and decided this was for dinner. Cheated a bit with canned four bean mix, canned tomato and dried biyadagi chillies so will have to cook again with non-canned and dried foods. very tasty.
