  2. I have made many risotto recipes but never with corn. I usuaiiy use a cup or more of wine in the cook. At this time it is sweet corn harvest where I live. So it will happen. I don't know about the scallops maybe shrimps or fish will work. Love your cook ware and your new studio. Health and Happiness Chuck.
