It's all a personal choice I think, I have to wash the dirt off my food. If you wash them and use them right away there is no impact to the integrity of the mushroom. They brown beautifully, taste great, etc. I learned that from Jacque Pepin and from my own personnel experience and I've been cooking a looooong time.
Wash them if you want. Chefs all say this, and it's not true.

That's actually a myth and has been debunked. They actually repel water. They are dirty little buggers, no way I'm not washing them.

Nope…wiping mushrooms is a waste of time and there is no difference. Restaurants use big cases at a time and they don't wipe each one.

Actually it’s a common myth. Mushrooms contain A LOT of water, they WILL NOT absorb water. And they grow in dirt so they must be washed.

I don't wash mushrooms. I either remove the dirt with a damp paper towel or I use a pairing knife and peel off the skin. Using cremini mushrooms is best in my opinion…..a lot less dirty than white mushrooms.

For your information when you don’t wash them in water you don’t get rid of the dirt if you look in the water you will see lots of dirt that you are eating
I have drie rubbed dirt off and rinsed with water. I have seen no difference.
