3 lb of Sweet Potatoes
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar
1/4 cup of Whole Milk
2 Eggs
1/3 cup of Unsalted Butter, softened at room temperature
Pinch of Salt
For the topping:
1/3 cup of Brown Sugar
3 Tbsp of All Purpose flour
2-1/2 Tbsp of Cold Unsalted Butter cut into small pieces

I made them yesterday because I bought so many extra potatoes around. I roasted them and my husband said, "there's no marshmallows? Well, I just got up and who had a big breakfast bowl of sweet potatoes and a cup of coffee? He said, "these are the best I have ever eaten in my life. Don't make any changes to them." Hubby Jim, your new biggest fan.
I like this lady’s recipes but she’s not that organized when filming. She skipped over oven temp when roasting the potato quarters. Unless my A.D.D kicked in at exactly the same time all four times I watched it.

So delicious and better with one addition, a teaspoon of vanilla added to the mashed sweet potatoes. Baking the sweet potatoes changed everything, making it a much more delicious dish. Thank you Laura!!

If I’m going to bake the potatoes ahead of time do I mix in all the ingredients and then cover or just mash and cover then add ingredients the day of?
Thank you. I double the topping and added 1/4 teaspoon of pumpkin pie spice to the topping.
What temp and how long?
I have baked this before and it is really yummy! The crispy, sweet, buttery and nutty topping makes this dish really stand out.

Can I freeze before baking?

I will never stop making this! I just made it for the first time this last Thanksgiving, and OH MY GOODNESS!
Just cut everything before .do not

Laura, I applaud you for cracking eggs into a bowl FIRST before adding them to the bowl of ingredients. I cringe when I see people crack eggs into a bowl full of other things. You can also add a little bit of cinnamon to this to put it even more over the top!

My mom made this recipe but she would cut oranges in half with a knife making teeth at the tops. Serated. She would pulp out the oranges 🍊 and cut 1/2 cup pieces and add to sweet potatoes. She would fill each orange half and after topping she would bake. She would do the same topping but add a few candies pecans on top.
